- Make spot checks each week on procedures of purchasing , receiving , storing , issuing , preparing and portioning.
- Assist in establishing and checking purchases of F&B. Assist in developing a list of items to be reviewed. Review and confirm all purchasing procedures periodically for F&B to ensure they are being performed correctly.
- Periodically review and confirm the procedures for receiving merchandise. Follow up and verify the procedures set up for food, beverage and banquet costing.
- Precost all restaurant and banquet menus of all purchases and prepared items. Develop information to precost all food items purchased.
- Supervises tallying of all items sold on the menu or drink lists of each F&B outlet.
- Carries out spot checks on portion control of all items dispensed in the kitchens.
- Prepares beverage cost potential of various beverage outlets quarterly or seasonally as required by management. Prepares monthly beverage potential cost percentage to actual sales.
- Has a passion for Cost Control

- Preferably has a Bachelor's degree or relevant experience in a similar role

- Communicates and writes with fluency in English (as well as the local language)
