Job Category: Supply ChainJob Description:About the roleThe primary purpose of this role is to optimally manage the winemaking activities in Stone & Moon (S&M) winery covering crush, fermentation, maturation and bottling.Additionally, this role will ensure Penfolds winemaking style is understood and implemented in S&M winery. He/she will be the key liaison between our global winemaking team and winery execution team, ensuring seamless collaboration with all stakeholders, precise process management, and lead the ongoing development of our local team.Winemaking & Production Management:Vintage specific operations as required, including vineyard assessments and harvest scheduling.Lead Crush planning, fermentation monitoring, maturation monitoring, and related processes up to bottlingTrack bulk wine status: implement sampling/monitoring plans, report deviations promptly, and coordinate corrective actionsQuality assurance of all responsible wines through periodic organoleptic and chemical monitoring, issue detailed work orders to the Winery operation team;Supervise daily cellar operations to ensure adherence to protocols, quality standards, and safety regulations.Conduct regular tastings and analytical assessments to monitor wine development and make necessary adjustments.Ensure overall compliance with product quality and regulatory compliance of the wine portfolioGlobal Collaboration:Work closely with the global Penfolds winemaking team to understand, interpret, and implement the defined house style and quality benchmarks.Participate in classification and tasting and provide feedback, ensuring production aligns with the brand's strategic direction and stylistic consistency.Act as S&M site custodian of winemaking philosophy.Data, Documentation & Communication:Maintain accurate, detailed, and timely records for all winemaking activities in system, including fermentation logs, barrel records, topping regimes, and blend compositions.Prepare and present data summaries and wine evolution reports to both local and global management.Ensure clear, effective communication of instructions and priorities between the winemaking, viticulture, and production teams.Team Leadership & Education:Support the education of S&M site winemaking and production team on the principles, history, and nuances of the Penfolds style.Foster a culture of quality, precision, and continuous learning within the winery team.Be the influential voice that ensures a deep, shared understanding of the brand's standards across all levels of local operations.Health, Safety & WellnessAlign and operate to TWE policies and safe work practices at TWE and partner sitesCompliance with the TWE HSE policies and take responsibility for solving and/or reporting workplace hazards at TWE and supplier sites.About youTertiary qualifications ideally with winemaking background or wine business degreeA minimum of 5 years of practical winemaking experience, preferably with exposure to premium or iconic wine production.Proven track record in managing the full winemaking cycle and a production team.A sophisticated palate and a demonstrable ability to understand, execute, and communicate a specific wine style.Excellent communication and interpersonal skills, with the ability to collaborate effectively across cultures and time zones.Strong organizational skills, meticulous attention to detail, and a disciplined approach to record-keeping and data management.Fluency in Mandarin & English is required.A deep respect for tradition combined with a pragmatic, results-oriented approach to problem-solving.
